Batch cooking and freezing

As I am (hopefully) about to give birth and am a. nesting like mad and b. bored as hell, I want to batch cook and freeze meals for the next month or so.
Any suggestions that go beyond shepherd's pie and lasagne, etc. ?

Chunky soups and casseroles freeze quite well - something slow cooked with meat, veg and a nice rich broth maybe. Soups with potato or rice in the broth make lovely filling meals.

Chilli and bolognese freeze really well too, and also homemade pies (I've only done this with filo though).

You could make various curry sauces? Every month or so I go mad chopping onions and tomatoes etc and have 4 or 5 pans on the go with different curry sauces, then I freeze and use as my own ready made cook-in sauces! I also cook rice and portion it off to freeze, as there are times I just want to microwave something but want it homemade!

If I'm in a pud mood I'll make a load of fruit crumbles and bread and butter puds and freeze them.

Ooh, and soup. Once you've got the blender out you might as well knock a couple out!

I did the same LQS. I did chucky soups with lots of veg and beans. Sauces to go with pasta, pies with pastry, Goulash and dumplings and stews. Basically add some carbs to anything you do as you'll need them for energy especially if you're breastfeeding and you'll need to keep your strengh up too on very little sleep.

Also, chilli con carne freezes well.

I made a whole mess of tomato sauce. Otherwise I just froze masses of mince, chicken breast and sausages, as well as lots of veg. I don't eat curry, but the curry sauce is a good idea. That way you have the bases of making a variety of dishes without committing yourself in advance. And definitely do soups.

I have to say, though, I am eating an awful lot of sandwiches at the moment (my son is 8 weeks old). Anything you can eat with one hand is ideal in the early weeks.

Yep, my sisters in law mastered the one handed food rule quite early on and now live on sandwiches and non drip bread based things!

Thank you all. Shall get going after midwife appointment this morning and a trip to Sainsbury's. Going to get lots of those take-away containers too to portion it all up, and for easy stacking in freezer !

I use those Poundland containers to freeze 2 and 4oz portions of cooked rice (sometimes with a sauce on top). Defrost thoroughly and blast in the microwave to reheat. I leave the lid loosely askew to prevent the rice getting dry and crunchy around the edges.

Pasta bakes are good, you can make about 3 or 4 portions in a single go and they freeze/reheat very well. Staple part of my short-on-time/short-on-money student living!
