Recipes for a great cakes

Just invested in a whole new set of bakeware and I'm ready to rumble.

Personally love Chocolate cake and carrot cake more than fruit cakes but willing to try whatever you suggest.

Do you have any really nice recipes for cakes to get me and my 5 yr old daughter back in the swing of Sunday baking

I didn't use the lemon juice either as I am allergic to citrus.

I found it really easy to make. It does look a bit mushy but it hardens as it cools to the most scrummy cake.

Wow that is scrummy, yes it is a bit mushy until it cools down, i didn't put any icing on, personal choice, it's moist enough without............ thanks again!

I make a lot of cakes! I would love to do baking with a daughter - I bet you have loads of fun!

One of my favourite recipes, and dead easy, it would be really good for doing with children:

Nigella's Chocolate Muffins (adapted slightly)
* preheat oven to 200C
* mix 250 g plain flour, 2 teaspoons baking powder, 1/2 teaspoon bicarb, 2 tablespoons dark cocoa, 175 g caster sugar and 150-200g dark chocolate chips (or just roughly chopped dark choc - I prefer this because it makes varying sizes of chunks, but you might not want this with a five year old) - stir to mix up.
* add 250 ml milk, 90 ml vegetable or corn oil, 1 egg and 1 teaspoon vanilla essence.
* stir to blend, doesn't have to be smooth, lumps are quite good.
* spoon into muffin cases
* sprinkle the leftover dust/bits from the chopped chocolate over the top
* bake for 20 minutes

They rise nicely and smell great, and when they're fresh and warm the chocolate lumps are all melty and warm. Sometimes I make them with white chocolate chunks instead of dark, that's nice too.

This is the recipe I use for carrot cake. I sub the pecans for walnuts and add a teasp of mixed spice. It is really good and actually tastes better the next day.
