Chilli Con Carne

Hi everyone,

Just wondered if anyone had a really good recipe for a chilli con carne, noticed in the past couple of days that a lot of you were having it. I usually buy a jar of premade chilli sauce from morrisons but would really like to have a stab at making it from scratch.

living with a veggie we have soya mince chilli, but the basic sauce I make is;

fry some onion and garlic, bung in some green peppers, mushrooms, fresh chillies or chilli flakes, this would be where you put in the mince I guess and fry it off till it's cooked, bit of cumin powder (not too much or will end up tasting like curry), tin of chopped toms, some tom puree, bit of water and tin of kidney beans. Leave it to simmer and keep tasting and add more chilli flakes, salt and pepper according to your taste. I never follow an exact recipe, they come out a bit different every time! That's the basic I use, but the great thing about 1 pot meals like chilli is that you can adjust it to suit you, a dash of worcester sauce is good too, but that might just be because I use soya mince which needs a lot of help to actually taste of anything!

I've made some yesterday, for dinner today. I used the following recipe as a guide line . http://www.cacaoweb.net/chili-con-carne.html

I did use dried kidney beans, soaked overnight and cooked for 1.5 hours. I also added some extra cumin (as I love the flavour). Definitely sprinkle with some fresh coriander leaves before serving.

I bung everything into the slow cooker and do it that way..I just leave it cook on low or auto at night and its ready for when i get up for next day..Nice smell too for breakkie time
I use...
Chilli mix( with the water)
Tin tomatoes
Tin of baked beans (more beany lol)
Chop an onion
Red kidney beans
Mince (of course)
Just bung in slow cooker and leave...

For a good Chilli you will need Minced Beef, some good value rice and a jar of uncle bens. It's always handy to have a bottle of Tabasco sauce too.

My tip is to use pinto beans rather than kidney beans - better flavour, less cooking, won't kill your whole family if you get them wrong. Soak for 6 hours, boil for 1 usually does it.

jemima69, I often make a vegetarian chilli, but don't bother with vegetable based mince. Beans are already a substitute for meat, so I add also borlotti & cannoli beans.
And I often use sweetcorn aswell, vegetarian chilli or not. But I always add a chunk of dark chocolate at the end, it gives another dimension to the dish.

I usually chop an onion and fry in some Flora until soft then add 500g steak mince and brown then add an Oxo cube.

I then chop up 2 garlic gloves and 2 or 3 chillies (scotch bonnet -hot!) and add. I add a tin of chopped tomatoes, small tin kidney beans and a splash of Worcester sauce.

Finally I add a dollop of tomato ketchup. Can't remember where I saw that - might have been Sophie Grigson

will definately try it. I wouldn't normally bother with "fake" meat, as you said, beans are enough, handful of lentils, OH likes soya mince though.

I use lean mince and fry this until brown add an onion and then I add a thinly diced small green and red chilli to the meat.

I transfer to my saucepan, add tinned tomatoes, a dash of tomato sauce, an oxo cube dissolved in hot water. I add another thinly diced red and green chilli, cumin, chilli powder (as much as you wish - I like mine the spicier the better!!) also roughly chop a red and green pepper and add those.

I then simmer for half an hour, and add some black chocolate - I use Green & Blacks 80% cocoa.

Prepare and add the kidney beans, simmer for a further 10 mins and serve with rice and coleslaw!!! Yum!!!

Chilli is always better if you have it the day after........

Similar to the other recipes here with lots of garlic and fresh chilli, but I always add lots of extra veg to stretch it (mixed peppers and mushrooms usually - these also mean less liquid needs to be added if slow cooking) and I also add a glass of red wine and do half and half pork and beef mince, both drained of fat before being used in the dish.

I don't put beans in mine as I hate them, I use sweetcorn instead, I also put a bit of cinnamon in and a couple of bayleaves as well as the normal tomatoes, chili, tabasco, beef stock.

I am having it tonight with rice and tortilla chips topped with cheese, sour cream and tomatoes.

We are having it tomorrow with tattie wedges.

yes, definately, sometimes I like to bung a cinnamon stick in with the rice, good with curry too

I have used this now for a number of years and it never fails to produce a rich, flavoursome chilli which just needs some rice, cheese and maybe a dollop of soured cream....

Soften an onion, then add lean steak mince.

When mince is browned, add a clove or two of garlic (I tend towards two but then I tend to smell like a horse the next day...!)

Give the garlic a couple of minutes to cook, then add a jar of passata.

Add a hefty teaspoon (or two) of oregano, a teaspoon each of ground cumin and paprika. Add chilli - I use the really lazy chilli - to taste.

Cook for ages! Preferably at least three hours on a low light, topping up with water if necessary and adding beans - kidney or pinto - in the last half hour or so. Its even better if eaten the next day.

Here's my recipe:
Ingredients:
1 - 2 Cloves Garlic
1 Onion
1 Teasp Whole Cumin seeds
1 Whole Chilli pepper (green or red)
2 tblsp Veg or olive Oil
250 gram Best Mince
1 Red Oxo
! tin Plum Tomatoes
1 Tblsp Tomato Puree
Salt
Black Pepper
1/2 tblsp Chilli powder
1 tblsp Oregano
1 teasp sugar
1 Large Tin Red kidney beans

Heat the oil on a medium heat
Add the whole cumin seeds and stir for a few seconds
Add the chopped onion and garlic
Add the chopped and de-seeded chilli pepper
Cook over a medium heat stirring occasionally till the onion is soft
Add the mince and cook stirring till brown
Mix the tomato puree, salt, pepper, chilli pepper, and sugar together in a cup and add to the pan
Add the tinned tomatoes
Crumble in the Oxo
Cover turn heat to simmer and Cook for 30/40 minutes
Add the Oregano
Drain the Kidney beans and add to the pan
Cook for 10 minutes to heat beans through

Eat with boiled rice or boiled potatoes or jacket potatoes.

I make it for two people and there is always some left. If you're making it for more then increase the quantities accordingly.

Has anyone ever cooked it the authentic Mexican way? They use cubed meat, rather than minced. I have never tried it this way.

Finish off your chilly with half the juice of a lemon, a few squares of dark chocolate and some chopped coriander.
