3 ripe bananas

Hey there,

I have three very ripe bananas that have gone past the eating plain stage. I wanted to make some kind of banana cake, I have all the ingredients I think, but no whisk (just moved, not unpacked properly), and also not sure of quantities.

Any ideas anyone? Doesn't have to be cake.

I only have three bananas, you think it will still work? Also no loaf tin, was going to do cupcakes... Ah I can only try my best!

I used 3 in my recipe and it was fine - they were quite big though! I've also made muffin recipes as a loaf and vice versa before - they are all similar afterall!

1tsp baking powder
Cinnamon

I know, we are overrun by the stuff, I would rather have a wee cake than a lump of chocolate tho, hence the baking!
They are in the oven now, it made 22 cupcakes, I am excited, and nervous, the mixture tasted quite nice tho...

They smell amazing!! I am soooo excited. I used brown sugar so they should taste slightly caramel-y.

I should go into the cake business.

They are epic cupcakes. I am so proud of them.
Got these awesome cake cases, they are silicon ones but for cupcakes, so washable and reusable.
I am not a fan of peanut butter but I am sure would be good if you liked that type of thing.

I've seen those cake cases, do the cakes come out of them easily enough, I went a bit mad with cakes not long ago and found a website that had cake cases for all occasions

I would make a cheats bannoff personally!!

Digestive biscuits and butter for the base
Chopped up ripe bananas on the biscuit base
Tin or carnation caramel sauce (like the condensed milk one)
spread on top and served with a dollop of fresh cream

Quick and easy and very yummy

That sounds awesome, but the muffins are already baked, they are amazing. I wish I could share them with you all!

Make a base with crushed digestive biscuits and margarine/butter. Mash up the bananas, add a pot of strawberry or raspberry yoghurt and mix. Pour the mixture onto the base. Bake.
