Creamy Mushroom Sauce
I need a recipe for a quick creamy mushroom sauce which will be served with steak. Preferably made with red wine instead of white. Any ideas?

Saute shallots and mushrooms in a little olive oil or butter until shallots are translucent.
Add a glass of good red and reduce right down until almost gone. Add chicken, beef or vegetable stock and reduce by half. Add cream and reduce until it's the consistency you want. You can strain at this point if you want but I don't. Season to taste and stir through some chopped fresh tarragon or parsley. For steak I would use parsley. Also if there are any pan juices from the steak, tip them into the sauce as well. Whatever you do make sure you don't add any salt before right at the end. It really is simple, and far better than anything you can buy!
