YUK!

Can't stand melted cheese, except on a pizza.

(Can't stand tomatoes either, except as the purée on a pizza or in a C-C-C or Spag Bol).

I grill the pitta and thinly slice the cheese so it melts when I put it in the pitta.. Although I'll always bung the pockets under the grill if I want the cheese melted a bit more!!

Never EVER use Tesco Canadian cheddar. It melts and runs off the bread, into the grill pan!

Toast one side of your bread.

Turn over and thinly spread a layer of Marmite over the untoasted side.

Place your cheese slices on top of this.

Put back under the grill and toast for about a minute until it's just starting to melt.

Bring back out, splash on some Worcester Sauce then some Nandos peri-peri sauce or Tabasco, which ever hot sauce you prefer.

Grind some black pepper on top.

Return to grill to fully melt/toast.

Eat and enjoy!

I love grilled cheese on top of slices of tomato with lots of salt and pepper. Nothing nicer.

Another good way to jazz up grilled cheese on toast is to toast one side of the bread, spread some tomato paste on the ungrilled side, add pepperoni or salami slices and then cover with good cheese. Grill. Serve with some fresh basil on top. Yum. Not good if you're dieting though.

I now use those toastie bags from jml as there is no messy grill pan to wash up and they taste great.

I got one of those useless oven/grill combinations and whenever the grill is used it burns off the fats that splatter it when roasting. So I use the toaster to make the toast and then cover that (the toast not the toaster) with cheese or other variations and micrwave for 40 to 50 seconds

I do like the Worcester sauce variation. Never tried it with mustard though. Hmmm...

Others
- grated cheese mixed with raw onion
- dash of chilli sauce (either hot or sweet)
- rub toast with raw garlic before adding cheese.

My really lazy version is a couple of slices of bread in the toaster, slice of cheese, then zap in microwave for 30 secs. Safer to do when drunk as there's no chance of forgetting the bread under the grill.

Mustard definitely, but I mix two types of cheese grated (a hard cheese with a strong flavour and then something semi soft and less flavoursome like edam) with a spoonful of Dijon before spreading on the bread and grilling - delish!
