The credits are in the cd booklet, The Moment I Knew is written by Taylor and produced by Nathan Chapman, Come Back...Be Here is written by Taylor and Dan Wilson, produced by Dan Wilson.
It is a bit random that Liz Rose has a credit on the album, It stuck out to me even before I heard the song. I know Taylor mentioned that the original demo of All Too Well was 10 minutes so you might be onto something that she drafted Liz in to help compress it. I would love to hear the 10 minute version, it would be no doubt even more epic!
It is hard/impossible to pigeonhole this album into a specific genre which is why I hate when pople claim she has gone pop! As you mentioned it is all subjective, it's not on a par with her previous albums but still very enjoyable and for me much better than anything else other artists are producing at the moment.
Her debut album is one of the few albums I love every song on, not heard an album since that I can say that about, though Fearless comes close
