Anyone have an authentic Arrabiata sauce recipe?
I love Arrabiata - have tried some shop bought varieties and none have tasted anything like the restaurant variety

It's pretty simple as you see, basically just a standard Italian tomato ragu plus dried chilli. I like add in finely chopped bacon as well, which technically makes it amatriciana, I think. Can't really go wrong with it, just make sure you are using the best tomatoes you can find.

Sometimes it's the most simple things that are hardest to recreate!!!
I have tried the fresh version from Waitrose and M&S - neither tasted anything like what I have had at restaurants!!! I'll give it a bash making my own and see how I get on!!! |

The one you found looks to be pretty close to the original.
You can add Smoked Streaky Bacon into the mix as well to give it a bit of Uumph if you like, but someone has already beaten me to that suggestion!!

i find that if you cook the onions really slowly for a good ten minutes it makes a huge difference to the overall taste. I also add fresh oregano and basil. i use minced chilli as i think it tastes fresher and just generally more tasty than hot.
I also add some parmesan to my sauce before i serve it. Oh and i add a teaspoon of sugar to bring the flavour out in the tomatoes. PM me if you want the full recipe and i will find it for u good luck!! |

As mentioned above, the tomatoes are key. As you live in London you should have no problem getting good quality Italian tinned San Marzano tomatoes. Without question the best. I prefer them to fresh.
