Anyone have an authentic Arrabiata sauce recipe?

I love Arrabiata - have tried some shop bought varieties and none have tasted anything like the restaurant variety

Does anyone have a tried and tested recipe?

Although if anyone has perfected the sauce I'd love to hear what recipe they use

It's pretty simple as you see, basically just a standard Italian tomato ragu plus dried chilli. I like add in finely chopped bacon as well, which technically makes it amatriciana, I think. Can't really go wrong with it, just make sure you are using the best tomatoes you can find.

Sometimes it's the most simple things that are hardest to recreate!!!

I have tried the fresh version from Waitrose and M&S - neither tasted anything like what I have had at restaurants!!!

I'll give it a bash making my own and see how I get on!!!

The one you found looks to be pretty close to the original.
You can add Smoked Streaky Bacon into the mix as well to give it a bit of Uumph if you like, but someone has already beaten me to that suggestion!!

i find that if you cook the onions really slowly for a good ten minutes it makes a huge difference to the overall taste. I also add fresh oregano and basil. i use minced chilli as i think it tastes fresher and just generally more tasty than hot.

I also add some parmesan to my sauce before i serve it. Oh and i add a teaspoon of sugar to bring the flavour out in the tomatoes.

As mentioned above, the tomatoes are key. As you live in London you should have no problem getting good quality Italian tinned San Marzano tomatoes. Without question the best. I prefer them to fresh.
