Cooking for folks tomorrow night - simple and cheap veggie curry
Recipe suggestions please! My parents are veggie and I am cooking for them tomorrow (Thursday) night. Have left my cookbooks at university and would like to get some tried-and-tested recipes. Got to be simple and inexpensive.

My parents like my chick pea and potato curry. It's not 'authentic' or anything, but it's tasty. And cheap. This is how I do it
-Soften a large, chopped onion in some vegetable oil -Add two heaped teaspoons each of cumin powder, garam masala and tumeric and let it cook out a bit -Mince/finely chop four cloves of garlic, four green birds eye chillis and 1/2 - 3/4 an inch of peeled fresh ginger. Add all this to the pot -Stir in some peeled, chopped potatoes (one large tater per person) -Stir in a large (drained) tin of chick peas -Cover with stock (usually water plus boullion powder) -Bring to the boil, turn down and simmer for twenty/thirty minutes or until potatoes are tender -Taste, season, add a good squeeze of lemon juice and a handful of fresh, chopped coriander And that's it. Sometimes I end up with too much liquid, which I have to ladle off ![]() Serve with boiled rice Ooh, and it's nice to serve it with plain, natural live yoghurt (yum) or you can add chopped cucumber / coriander / mint / onion to the yoghurt to make it into a kind of raita Because of the lack of veggies in this dish I'd reccomend serving it with either a side vegeatble, fruit juice or a fruit salad to finish (although my dad's happiest when presented with tinned mangoes and custard )Good luck
