It's delicious ... my favourite bird, I prefer it (though only marginally) to duck, though they are so different as to be almost incomparable.

We used to have pheasant a lot when my grandpa was alive and went shooting.

Pheasant is a deliciously tasting meat, it does have a gamey flavour, however some birds are 'higher' in flavour depending on how long they have been hung.

It's lovely roasted, if there is any yellow fat on the bird, it's best not to eat it as it very very sharp tasting and may make you instantly dislike it, you may asume it is the taste of the meat. I serve it with breadcrumbs, thin game chips and bread sauce, along with some veg.

We have a brilliant fish/meat shop who sell pheasant breast fillets all ready skinned, I make a pheasant in wine dish, with mushrooms, tiny onions and obviously red wine ....... it is beautiful.

I've only had it once and it was in a restaurant and came with a red wine and chestnut sauce.

It was nice but the sauce was way too strong and to be honest it could have been chicken I was eating.


The same happened in a restaurant when I had Veal. It was in a marsala sauce and it could have been chicken, turkey, pork, even beef for all that you could taste of the actual meat.

I find pheasant to be a bit rich but very nice to eat.. I love to have it with rabbit and turkey in a stew.. the turkey seems to balance it out.. a little alcohol in the stew seems to really bring out the flavours.. Yum...
