Make a big thing about Frying New Potatoes. Every chip shop in my local area have a sign up "NOW FRYING NEW POTATOES". Thing is they make awful chips hard as nails and very small. I refuse to have Fish and Chips until the potatoes get a bit older.

Fried new potatoes always make me gag and throw up for some reason. OK boiled though.

I've never seen that! New potatoes? That's odd... why would you want to make chips out of new potatoes?
Maybe its Just Norfolk then but ever since I can remember the chip shops always display these signs every year.
Pants. I fancy fish & chips now. Might treat myself tonight (thankfully my local one doesn't use new potatoes!). 
Never seen them down here, either. Or anywhere else I've been. Roasted new potatoes can be good (olive oil, garlic, rosemary or olive oil and chilli etc). Not sure about fried, like fish and chip shop chips. It does sound as if it wouldn't be a good idea.

Oh yeah... roasted whole with olive oil, herbs and spices (to suit) they're yum.

um...nope the local FNC shops round here still use the good old potatoes they always have, and now I really want some.
Because when fried, new potatoes tend to absorb more moisture and fats. This gives them the appearance of being a bit soggy, especially if they are left in the bag for a few minutes. The signs that the shops display are there to remind customers of the difference and to discourage them from complaining unnecessarily that their chips are soggy and that they taste different to what they are used to.

I can understand that but... why buy them new in the first place if they think it's going to attract complaints? Are they cheaper?

They taste ...well...old. They have a peculiar flavour that tastes as though they are rotten.

Eeww. I eat old potatoes all year round, I've never thought they taste like they're rotten at certain times of the year though.
Years ago when chippies were using new potatoes the price would go up until they went back to using old potatoes, now it doesn't matter if they are old or new potatoes the price just goes up... and up.... and up... but they never go back down again.

Huh?I meant old potatoes as opposed to new potatoes. Not old in the sense that they're full of roots, wrinkly and on the verge of rotting.

I always remember those signs from when I lived in Norfolk, cannot say I have seen any recently.
