Knife Sharpening
Hey, can anyone help me out with a knife sharpening system, I was thinking of buying the sharpening stones, but I heard you have to be savvy with the angles etc, is there a simpler way to sharpen my knives? Any help appreciated

If you want something easy that won't destroy your blades, get a MinoSharp / Shinkansen water sharpener which uses small sharpening stones wheels wet with water. It's much like proper stone sharpening but won't trash your blades like most sharpeners.
I bought this one: http://www.amazon.co.uk/Shinkansen-W.../dp/B0000A33LJ A diamond steel is handy too once they are sharp for keeping the edge but you could get away with just this and run it through the small wheels briefly occasionally. Don't buy anything else called a "sharpener" though as the majority will shave loads of metal off your blades. |

Second the Mino Sharp... I put my knives in the dishwasher which blunts them, but this gadget sharpens them up in about 20 seconds flat and is really easy to use !

I used a diamond encrusted block that I got from b&q it has four sides with different grits, can’t find it now but it cost less than £20 and then just run the blade over it at an angel of 22.5 degrees, which is easier than you think all you do is hold the knife at 90” to the block then half the angle then half it again and a few swipes each side then onto a steel.

Learning how to use a steel is so easy you should master it in about 5 minutes, probably videos if you Google.
Then a few swipes before or after each use and your knives will always be sharp. |

I've ordered this AnySharp
http://www.amazon.co.uk/AnySharp-ANY...6540478&sr=1-1 It got good reviews. I can use it to get the knives back into sharp condition then use the steel to keep them, in hopfully, tiptop condition. I'm taking the view of one of those reviews in that my knives only cost £25 (although they were apparently a bargain. I think one quoted RRP was £225. Not bluddy likely )So i'm happy to get them sharp and if they only last a year or two then so be it. |
