What to bake white fish with?

I want to bake white fish fillets in foil in the oven tonight but not sure what to chuck in with it. Im thinking chopped cherry tomatoes, red onions, garlic, butter, lemon, paprika, bay leaf. Then using the juice as a kind of sauce. Will these flavours work or not? If not has anybody got any ideas? Thanks in advance.

Sounds nice. Not sure about the paprika though, would probably be fine without. Unless you are a big paprika fan, in which case knock yourself out!

Sounds lovely, the only thing I would add is some salt & pepper and a splash of white wine. This will emulsify with the butter to make a nice sauce.

Oh yea I will def season the fish. Havent got any white wine though im afraid. Im a red wine person lol and cant justify buying a bottle to use just for the fish so will have to do with out. Glad you think it sounds okay. Not that good on flavour combos yet.

Finely sliced fennel goes well with fish and that technique, if you like fennel.

This was on Market Kitchen the other day
Sea bass in a lemon, basil and vermouth sauce (with Spinach)
