A tip for any of you home made onion ring/chicken ball/Onion Baji makers:

Use Soda Water instead of milk or water! It really makes the batter incredibly crispy and light!

depends what you are making.
If you are making a beer batter then the beer will give it a bit of a fizz and that slightly yeasty flavour.

On a Rick Stein program when he was in Whitby and having his favourite fish & chips he said the batter was simply plain flour, water and a pinch of bi-carb of soda.
