I don't really like lamb that much, but if I do eat it (or any other meat) I always like it well done. Even a half decent chef or cook should be able to cook something to be well done while making it still nice tender, juicy and tasty (if I can do it, I'm sure it's not that difficult)! I think some chefs take the mickey when you ask for a steak well done and they cook it so it's all tough and dry..they really just show how bad a chef they are.
