Hello, my bf and me went to the international market at the weekend and got some hot Italian garlic mushrooms from a stand, they were amazing. The sauce was reddish/brown and almost looked like curry, tasted a little like it too but without the spice. Does anyone know how these are made, they were delicious!

I would suspect that the base is the typical onion, garlic and tomato all cooked down (possibly pureed) into a thick paste.

Extra Italian flavourings would typically contain basic & oregano rather than ginger, cumin and corriander.
