If you have a quick & simple recipe that you would like to share with others, post it here!

Summer Fruit Pancakes in chocolate sauce

Servers: 3

Ingredients:[LIST][*]6 Pancakes (home made or bought)[*]Bag of frozen summer berries[*]1 King size Mars bar[*]250ml Double Cream[/LIST]
If your vegetarian, substitute the Mars bar for some milk chocolate

1. Defrost the summer berries and then distribute them evenly in the middle of each pancake. Roll the pancakes up and place 2 pancakes onto 3 serving plates.

2. Heat the cream in a saucepan. Break up the Mars bar and add it to the cream. Stir until melted.

3. Once melted, pour the sauce over the pancakes and serve. If your greedy, dish it up for 2 people and have 3 pancakes!

i bake quite a lot and adore any new recipes!!

my favorite at the min is coconut macaroon with chocolate

2 large eggs
100 grams of caster sugar
1 teaspoon vanilla extract/essence
300 grams dessicated coconut

pre heat oven 180 degrees
beat eggs and vanilla essence in bowl and add 2 bags of dessicated coconut. mix well
put in small mounds (about the size of truffles) on a tray lined with baking paper about 2 inch apart
Bake for about 15 to 20 minutes or until golden brown.
Remove from oven and let cool on the baking sheet for about 10 minutes and then place on a wire rack to cool.

dip the bottoms once cool in melted chocolate and drizzle over top

or if for guests make a dippable ? (sp) ganache
100grams chocolate
100 ml of double cream

melt chocolate in a bowl
add 2/3 cream and mix well, add rest and mix again (stops the mix lumping)

and get guest to dip themselves!
