Pickled garlic - any ideas on how to use it?

When I was out shopping yesterday, I saw some jars of pickled garlic and I was wondering how it might be used in cooking.

Does anyone have any good tips or recipes that use it?

Dunno, really, I doubt there'd be any point in using it just in ordinary recipes where the flavour would be lost. Maybe crush it up and use it for bruschetta - toasted crusty bread, smeared with garlic, chopped ripe tomatoes, pepper, basil, drizzle of olive oil.

Mash it and spread it on chicken just before BBQ'ing it.

We make pickled garlic and use it all the time in our cooking.

It goes wonderfully with stir fries, helps marinate meat and try mixing in a little with rice.

If you do pan fried meats, use the pickled garlic in a little butter, the add mushrooms.

My wife, who is Chinese, would not be without it. We have about 6 jars of the stuff in our larder from last year.

Tough, get yourself a Chinese wife.

Joking apart, the stuff you buy in the shops is not a patch on the home made item.

We have tried shop garlic, but not as good.

The other way, is to chop up fresh garlic, fry it in extra virgin olive oil and then jar it up (complete with the oil) for later use.

Our kitchen is taken over by garlic when she is in the mood. Kilos of the stuff complete with litres of extra virgin.
