Lime Pickle - tips
I made some lime pickle a few years ago but the limes went furry. I've go a lot of chillies at the moment, can anbody give me a recipe/tips for foolproof lime pickle?

I'm not an expert, but my mum used to make a lot of jam and stuff. I expect you already do sterilise all the equipment and seal the lids over the hot liquid to vacuum pack it, but you might also try the following:
Find a good winemaking supplier and get some sterilising tablets and put that in your mix. It can't do any harm, and it may help. Here's a tip on sterlising the jars: http://www.ehow.com/how_2136636_ster...e-bottles.html I'm not sure if you ought to use Campden tablets as well as these kill yeast in wine making, but also kill some of the bacteria. |
