Fish Batter
I have got some Cod to batter and deep fry tomorrow. I am looking for a basic batter recipe not one with beer or soda water,
My bf says its just flour and water and I think its egg flour and water like when you make a yorkshire pudding. How do you make a basic one ?, I don't want any beer/soda water recipes thanks in advance. Edit: And how hot do you have your fat fryer

You need a simple flour and water batter.
Mix about 125gms of self-raising flour with about 150ml of fizzy bottled water (the cheapest will do fine), and whisk until a smooth batter is made. Coat the fish fillets lightly in dry self-raising flour, then dip into the batter mix and fry in oil at 180 degrees centigrade for 3 to 5 minutes until golden. Don't put too many fish in at a time, or you will cool the oil and the fish will come out with soggy batter. You could use the same batter to make pineapple fritters for afters. Dry the pineapple rings with kitchen paper, coat with the flour, and dip in the batter, before frying for about 3 minutes, until golden. Drain and drizzle with maple or golden syrup. BTW. When putting battered food into a fryer, place them into the oil, rather than putting them in the basket, or the batter will stick to the basket wires. Better yet, remove the basket altogether, and remove the food with a pair of tongs. |

![]() Just self raising flour and fizzy water. I've been using it for years and it's never failed me. Just remember that if it's been standing for more than a few minutes, to give it a whisk before using it. BTW. The syrup goes on the pineapple fritters, not the fish.

Would plain flour be any good?
And if you use a fat fryer whet temp do you have it at, I don't want it cooked outside and not inside |
