Soy/soya flour

What is the difference between soy and soya flour or are they both the same?

If they are, what is the difference in the carb content to wheat flour?

Soy and soya flour are the same thing, but I wouldn't try replacing wheat flour with it as you'll be disappointed with the result.

Is it just the carbohydrates you're concerned about?
It might be that spelt flour (an ancient type of wheat) might be healthier.

You could also try Rice, Potato, or Gram (Chick Pea) Flour - although with the Gram Flour you really need to do a 40:60 mix with maybe Rice otherwise it can be very heavy. Gram flour is high in protein & low in carbs & fairly easily digested.
