I don`t think she used to be a model. Not sure. The only thing I know about her is she married George and has since made a mint of money out of her "failed" marriage.

She's fairly easy on the eye, and even easier on the ears. 
No doubt its a tactic to avoid being picked for challenges or bunged out too soon. Mind you, you see lots of conversations going on in the live-ish feed from ITV2 but it's always the same people you see talking on the edited ITV show. I assume the presenters are doing there best to manipulate things again.

I don't think it's anything to do with the editing or whatever. If that were the case, I think they'd have to manipulate that she actually speaks and do a talkover or something. She is just terribly, terribly boring and dull. But mind you, she's not the only one. Kerry-motormouth needs a gag and is equally ,if not more boring than Alex is even though she never shuts up.
