Looking for a good chilli sauce
I have been searching for years for the must have chilli sauce and I am getting kind of fed up, please help. My personal tastes tend to be for hot and spicy food and have tried so many chilli sauces i have lost count. Each have had their benefits and draw backs but I still have yet to find the right chilli sauce. I am looking for a sauce that have loads of flavour and a bit of a kick to it. It needs be be able to be used as part of a sauce or to add spice to a dish. I have done all the insanely hot sauces and in my view they just taste hot and do not add to the flavour of the dish. What sauce do you guys use and if you make your own can you tell me what you do as i have a crop of chillies ready to go?

The two "hot" chilli/pepper sauces I have in the cupboard at the moment are Encona and an Indian Chilli and Garlic sauce from Asda. They are the syrupy kind of sauces, not the fresh chilli takeaway type.
I haven't gotten around to making this yet but it looks like the kind of takeaway chilli sauce you get around here. http://www.contentmart.com/articles/...uce/Page1.html |

My favourite is Cholula Hot Sauce which I use on nearly everything. it's available in all the supermarkets and is much, much better than Tabasco IMHO.

Encona for me.
I grow chillies but I dont make sauce - simply freeze the chillies whole then use them in chilli/risotto chopped up straight from the freezer - they go a bit mushy if you let them defrost 1st. |
