Lentil and chickpea recipes
Can someone suggest any lentil and chickpea recipes please? Not combined.

Lentil Dhal - Wash lentils well, leave to drain. Fry in a little oil garlic and ginger, I normally use a tsp of each to 1 cup lentils. Add black onion seeds, cumin, ground coriander, tumeric, teeny bit of asafoetida. Add lentils when garlic is golden, fry gently for 1 min, then add 2 cups of water and boil gently, skimming off froth regularly and adding more water when it's absorbed. After about 30 mins should be nice and mushy, then add salt to taste and cook until desired consistency is reached, yummy!
Lentil & Bacon Soup - Fry a chopped onion and bacon in butter, add chicken stock, lentils and a dash of sour cream, simples! Not so good with chickpeas I'm afraid! |

Those sound lovely, thanks.
When I make any dish with lentils or chickpeas do I need to soak them first? And with the lentils what's the usual quantity of water to each measurement please? |

Pretty sure chickpeas DO need soaking, but lentils don't. Just rinse first. With water, it depends, lentils break down and go mushy, so it depends what consistency you want them to be

I always soak both over night, but only chickpeas *need* it.
I do Chickpea and cauliflower curry or lentil and spinach curry which both share the same surrounding ingredients aside from the key ones mentioned (onion, garlic, ginger, chilli, cumin, coriander, tomato, veg stock, pinch of nutmeg, cinnamon stick, sometimes a dash of saffron). A classic greek soup with lentils is also dead easy - onion, garlic, celery, carrot, tomatoes, lentils, hot water, seasoning and then serve with a splash of white wine vinegar. You can also try hoummous with the chickpeas and I have an ace lentil burger recipe that I'll dig out for you if I can find it!! |

You can sprout both chick peas and green lentils - do it the same way you would mung beans.
My sister swears by sprouted chickpeas, but I've yet to try it myself - apparently they're nice in a general mixed salad. Chick peas are the main ingredient of falafel - you can also use the same mix to make a shallow fried 'burger' if you like - you do need fresh coriander/flat leaf pasley to give the authentic east mediterreanian taste though. |

I like the simplicity and cheapness of pulse dishes but they don't like me. Is there any way of avoiding, how can I put it, the wind problem?

There's a simple recipe I use for chick peas. Fry onions or leeks and mushrooms, make some mushroom sauce (or tin of soup, if in a hurry), add to mushrooms and onions, with the chick peas and some cheddar cheese and serve with roasted potatoes. It tastes better that it sounds!
