I decided to try out a veg box delivery and now I've got lots of vegetables and not much idea what to make!

I don't know why because it's all perfectly ordinary stuff I'm just stuck for ideas.

So anyone got any good recipes that include any of;

Runner beans
Courgette
Carrots
Potatoes
Leeks

Meat wise I have gammon steak, pork chops, pork mince (I think might be turkey), chicken chunks and white fish.

You could make a fish pie with the fish, potatoes & leeks or a veg curry.

You could do a lovely Leek, Potatoe and cheese bake with pork chops. Could also serve runner beans with that.

You could so a Spanish type tortilla, with the leeks and potatoes, with whatever meat and grilled courgettes with lemon and olive oil.

Or make a leek, chicken, courgette and carrot bake (shame you have no mushrooms), topped with sliced potatoes and with a cheese sauce poured over, topped with cheddar cheese, with runner beans in the side.

OP go onto the BBC website and type in the ingredients you would like to use and it will bring up recipes.
