Replacement for Porcini Mushrooms
I'm doing a recipe which requires 25g of Porcini mushrooms to be soaked in water and for that water later to be used to form part of the sauce, however I couldn't find any. I have chestnut mushrooms which are used elsewhere in the recipe but I don't know if this will create the same effect. I'm cooking for my boyfriend tonight and it doesn't look like it is going to go well.

Well, it's probably too late for this occasion, but what the recipe meant is that you needed a packet of DRIED porcini mushrooms, not fresh ones. I think dried ones are quite widely available? Or you can buy them when you find them, perhaps in a larger supermarket, and keep them for years (literally - keep them in a dry and possibly dak place, and they will last for 5-6 years, no problem). It's just a small packet, and it will give your preparations an exquisite and unique flavour.

^^^^I agree with above comment, there is no replacement for porcini mushrooms, try the specialised deli counters in supermarkets, they are as stated widely available.
