Suggest me a cool dinner to have tonight

My girlfriend is out with friends tonight so I fancy knocking up something tasty in the kitchen. I have:

Break
Sausages
Chicken
Cheese
Mayo
Mustard (3 kinds)
Pasta
Rice
Peas
Tomatoes
Kidney Beans
Mango Chutney
Sweet Chilli Sauce
Oyster Sauce
Soy Sauce
30 odd spices

I'm open to any random suggestions. The more interesting/weird, the better.

Something involving the pasta sausages and tomatoes, i reckon :
I agree, take the sausages out of their skins and fry the meat, breaking it up with a wooden spoon until you have browned nuggets. Now add some chopped onion and garlic and fry gently for a couple of minutes. Then sprinkle some fennel seeds in and add tinned tomatoes, salt and pepper, a few chilli flakes and a pinch of sugar. Let it simmer gently for 15 minutes until you have a nice sauce with whatever consistency you like. Add some cooked pasta to the pan and toss to combine.

That's a good suggestion also. I use the recipe below and it's bloody lovely, although I don't use Walls sausages (fcuking horrible), and I use white rice instead of the brown rice suggested.

Yep good quality sausages white rice and I like to add a bit of chorizo to mine

If i'm using chorizo I have chicken instead of sausage but that's the beauty of Jambalaya, you can bung absolutely anything in it. I have had some fantastic variations in New Orleans in years gone by. Love Cajun and Creole food!
