Pitta Bread a good recipe and any tips?

Place in a large, clean bowl, cover with plastic wrap and leave to rise for 2 hours in a warm place. Punch the dough down, and knead for 1 minute. Cut the dough into 12 pieces, shape into balls, and set aside for 10 min. Heat the oven to 200C/Gas 6. Roll each ball into a fine, flat oval. Bake on a lightly floured tray for 6 to 7 min, until puffy, soft and pale. Wrap in a slightly damp tea towel until cool. To serve, place in a hot, dry pan for a minute or two until warm.”

I have got this recipe and will be making little ones for nibbles to start a meal with humus etc.

I was thinking of making them and then freezing them and then heating in an oven on the day do you think will work?
I will be cooking and heating on a pizza stone.

Also I thought about adding different flavours herbs, roasted garlic, sesame seeds etc....

Has anyone done this and have any tips?

Are you planning to freeze the pittas after you've cooked them? If so, I can't see a problem with that. Just take them out as and when you need them and pop them in the oven to warm (or toaster on a low setting).

The herbs/garlic idea is a fab one.

I might give these a go myself. I'm a big pitta fan

Yes I am intending to cook them on Thursday for Sunday Lunch so I think they will be freshest done like that.
