Chicken Breasts - Can I make homemade Chicken Kievs?

I'm taking my usual Thursday trip to the butchers this morning and will be picking up a few chicken breasts.

I'm sick of the usual chicken curry, korma ect and want to make homemade chicken garlic kievs.

Can you actually make them from scratch??

Yes, my Dad used to make them from scratch.

It's easy to stuff or butterfly the breasts and fill them with the garlic butter.
The skill is making sure they stay completely bound up when frying, so that they don't burst and lose their insides.

Of course you can. Easy to make too. You need bread crumbs,flour,milk egg,tooth picks and garlic butter.

Put the garlic butter in the centre of each chicken breast and then secure with a tooth pick.

Dip the breasts in milk, then flour, then breadcrumbs. You could have the flour and breadcrumbs in a bag to make it easier.

Chill for an hour and then repeat the milk, flour and bread crumbs process if you want them extra crispy.

Bake in the oven at 190 for 30- 40 minutes until chicken is no longer pink and the juices run clear and no longer bloody.

You can deep fry them at 160 c I would omit the toothpick if you want to do it that way. Deep fry for 12- 15 minutes.

Should you wish a spicy garlic kiev then add some chilli or for more flavour some tarragon to your dipping bag.

So I can fry them? I was thinking of oven cooking them.

Do I just slice them open and add the garlic butter?

Search online. I'm sure there are recipes. Find the one you reckon looks the best.

EDIT: Here's one I found.

Ingredients
2 x British boneless, skinless chicken breasts
50g unsalted butter, softened
4 tbsp parsley chopped
2-3 garlic cloves, crushed
Seasoning
50g fresh white breadcrumbs
25g corn flakes, crushed
2 tbsp Parmesan cheese, freshly grated
1 tbsp plain flour, seasoned with salt and pepper
1 egg, beaten
1-2 tbsp vegetable oil

Method
1. Mix together the butter, parsley, garlic and seasoning. Place in the freezer for about 15 minutes.

2. Preheat the oven to 200C, 400F, Gas mark 6.

3. Cut a pocket along the length of the chicken breast with a sharp knife. Spoon the chilled butter into the pocket of each chicken breast. Pull the cut chicken over the butter to cover.

4. Stir together the breadcrumbs, corn flakes and Parmesan. Dust the chicken in the seasoned flour, then the beaten egg. Finally roll the chicken in the breadcrumb mix.

5. Place on a baking sheet and cook in the oven for 20-25 minutes

6. Serve with potato wedges and peas and carrots

Thanks for all the ideas guys!

I get 6 breasts for 5 Euro so I'll will try all them out.

I'll be eating Kievs for the next few days
