Just some up and excited as ive never had it before. Im going to roast it in some foil in the oven and serve it with green beans and new potatoes I think. Just not sure what to put in the foil with it?

I was thinking lemon, garlic, cherry tomatoes, olive oil, butter, some herbs. Anything else that goes well? Thanks in advance.

id have it just with butter in the foil without any herbs or anything especially if you have never had sea bass before, try it naked, its a lovely flavour.

Just don't overcook it, although steaming it in foil should keep it moist if your timing is slightly out.

How long should I cook it for. I was going to do about 18-20 mins.

20 mins. Not being a natural fish eater, I usually use olive oil, lemon juice and a sprinkle of mixed herbs and than cook it in foil to stop it from drying out. Does taste very nice. Green beans and boiled new potatoes go nicely. Enjoy

Depends how big the fish is.
* Whole fish 1 lb: check at 12 minutes, add 2 minutes for every 1/2 lb
* Fillets 1″ and thicker: check at 10 minutes, add 2 minutes for every 1/2″ more thickness
* Fillets less than 1″: check at 7 minutes
* Super thin fillets: check at 5 minutes

Check it by prodding at the thickest part, usually by the top fin. If it flakes easily it's done.

I'd say 18-20 minutes will be fine, like I said, if it's in foil it'll still be moist.

You could cook whole sea bass with ginger in the microwave for 4 minutes, full power. While that happening, heat up the cooking oil and spring onion. Then pour over the fish and add soy sauce on top of it. It's really nice and a quick way to cook it. Great to eat with rice...
