Lunch Box Ideas Needed!

Afternoon all,

I am starting back at college next week, and I've decided to convert from buying dinners there to bringing my own lunch in. Reasons I have decided to do this are to save quite abit of money (college dinners aren't cheap!) and also to try and start abit of healthy eating.

I've not had a lunch box since I was in primary school, so I only really remember having the ham sandwich with an apple and pack of crisps lunch box. But now I am trying to have some interesting dinners that are not only healthyish but also will provide me with alot of energy for the afternoon in college (I have aneamia you see, so I struggle to keep alert and not half asleep during the afternoons at college).

So, does anyone have any ideas they would like to share, I'm not vegetarian or anything so there's no issues with meat products.

I reccommend getting a laptop lunchbox. They're so much fun to make and there are loads of recipes online if you google for them.

I take things like pasta/couscous/rice and bean salads. Bean wraps. Hummus, breadsticks and carrot. Peanut butter and banana sandwiches, homemade pasties etc.

Hastalavegan... I wanted one, but they have now stopped selling the set with the neoprene sleeve in the UK. I was gutted when I found out . You can still get the straight forward box though, which is no good for my husband as he hasn't got access to a fridge at work.

I am really fed up with packed lunches. I have to make them for my husband, so i made them for me too. The trouble is, he likes bog standard stuff like cheese / ham / egg / tuna rolls, bag of crisps and a cake bar. But im bored with them now.

The thing is, i havent the time or the inclination to prepare 2 different lunches. I would love to have pasta or rice type things, and i have no started to do a little extra when we have it for dinner and pop some in a tuppaware for me ..... but i cant do it daily.

I have bought them on occasion, but i live in a tiny village, and the only place to buy things from is Budgens, and more often than not they dont have any left. Plus, they are blummin expensive, and the reason i do packed lunches is because i am on a budget.

I have been making out own bread with Lidl bread mixes ( only 99p for a packet that makes 2 loaves ) which are interesting as they contain nuts, seeds, rye flour, etc. At the moment we are a bit obssessed with having sandwiches filled with hummus and roast vegies. YUM .

Aw that sucks! I've given mine to my little cousin as I get strange looks at uni when I take it in and never have the time to finish it all anyway.

When I made pasta salads for lunch I made a massive batch on a Sunday and it got me through most of the week. Might be worth a try. I would jazz it up by having different things with it each day so it didn't get too boring.

I made a tuna bean salad the other day it were yum

I x tin of mixed beans (kidney, borlotti etc)

1 x tin of tuna

and what ever else you like - I love chopped avocado, cherry tomatoes, chopped cucumber and spring onions.

douse in french dressing - and eat mmm!

There is a poster on DS that makes up the most scrumptious looking lunch boxes, (they put photographs up, looked gorgeous) sorry but can't remember their username for the life of me, perhaps someone else can.

WOW Amazing ideas. Have just shown son and told him he could be having some of those in his lunchbox.

OP I sometimes use mini pitta bread instead of bread and fill with egg mayo or tuna and sweetcorn.

I think salads are your way forward and simply add a small bottle of dressing (premixed in a water bottle) if you don't have a fridge at your disposal; most foods can be kept at room temp for 3-4 hours anyway. Another great lunch is mixed beans (canned for simplicity) chucked over rocket and spinach and dressed with balsamic and honey with some pecan nuts as the final star ingredient.
