Roasting garlic
I have seen people saying that if you roast a bulb of garlic for garlic butter, it is better than just crushing raw garlic into butter.
I've not done this before. How long and at which temperature do I roast at ? I've always used raw garlic and it's been a bit harsh. |

I just cut a whole bulb in half through the "equator", drizzle with olive oil, wrap loosely in foil and bung it in the oven at 200c for 25-30 minutes. Let it cool for 10 minutes then squeeze out the golden nuggets. Really mellows the flavour. Nice in mashed spud as well as garlic butter.

Another tip is to blanch the garlic cloves to take away some of the harshness.

Another thing I use is the garlic puree you get in supermarkets for 50p; I mix it into some softened butter with some dried italian herbs and viola!!
Not the most authentic however very convenient!! |
