A boo boo with a recipe left me with 340gr of sugar whisked with 6 yolks..what to do?
Hi everybody..
instead of following a simple 5 step recipe for a crema catalana recipe (really simple) I overlooked an important step (i.e. use only a third of the amount of sugar stated, I used the entire amount, d'uh!). I'm now left with 340gr of caster sugar whisked with 6 egg yolks. I put the mixture into an air tight box and was wondering if it can be used for anything? A (pretty sweet, ha ha) cake maybe? Also.. how long can it keep in the fridge? Any suggestions welcome ![]() (including how to best discard of 12 egg whites, ahem!!!!!) Thank you

Add some milk and a vanilla pod and you could make a very sweet custard.
You could make a meringue with the egg whites. |

Add extra egg yolks and make 3 times the amount of crema catalona? Or make a 6 egg quantity of lemon curd and use the other 6 egg whites to make the merangue for the suggested lemon merangue pie. 6 eggs will give you a surplus of lemon curd, but it will keep in sterile jars.
