A boo boo with a recipe left me with 340gr of sugar whisked with 6 yolks..what to do?

Hi everybody..

instead of following a simple 5 step recipe for a crema catalana recipe (really simple) I overlooked an important step (i.e. use only a third of the amount of sugar stated, I used the entire amount, d'uh!).

I'm now left with 340gr of caster sugar whisked with 6 egg yolks. I put the mixture into an air tight box and was wondering if it can be used for anything? A (pretty sweet, ha ha) cake maybe?

Also.. how long can it keep in the fridge?

Any suggestions welcome

(including how to best discard of 12 egg whites, ahem!!!!!)

Add some milk and a vanilla pod and you could make a very sweet custard.

You could make a meringue with the egg whites.

A lemon meringue pie?

I had a quick look at the beeb food website and before it crashed saw a sweet eggy bread and apricot recipe that looked nice.

Add extra egg yolks and make 3 times the amount of crema catalona? Or make a 6 egg quantity of lemon curd and use the other 6 egg whites to make the merangue for the suggested lemon merangue pie. 6 eggs will give you a surplus of lemon curd, but it will keep in sterile jars.

I can't post the link at the moment, but there's a very good recipe for lemon curd on the BBC Food website.
