Chillis, Keeping them ? Storage ?
I have been given 4 chilli's by a friend in work, as she has grown some for the first time, usually when I buy chillis they come in a jar pickled and i cut them up and use them in various dishes,
What im not sure is what I should / could with these, should I hang them up to dry them to turn into flakes etc ? Whats the normal done thing with such fresh chillis ? They are ripe and green as they were picked yesterday ? |

If they are good to use but you don't want to use them now then you can freeze them.
Personally I halve them and remove the seeds before freezing but it's not absolutely neccessary. |

Freeze 'em, then use them straight from the freezer - no need to defrost.

so no one dries them out at all ?
I may split 3 and deseed (use the seeds myself to regrow ?) and try drying 1 out I have 4 see |

We grow our own. In the past from purchased seeds and from ones we've harvested from chillis we've bought in the shops.
So far this year we have harvested over 350 from a 3 year old, mini-bonnet, chilli plant, that we bought as a seedling from Simpsons seeds at Longleat. In the past we tried, fairly successfully, drying them, unsuccessfully pickling in either vinegar or oil but nowadays we freeze them. |

I've dried then strung on thread with a large darning needle and hung close to the boiler for a few weeks.
I have pickled them in vinegar and in dry sherry. The dried sherry was useful in stir fry and chilli con carne (very fiery) |

I often buy chilli in bulk when I go to Tooting as it's cheap. I usually spend an afternoon mincing it all with a mincing machine thing and then freeze it. Then I just chip a bit out whenever I need some.
