The earpieces don't necessarily help you stay in key, it's just for foldback so they can hear the music and themselves.
You're bang on though about singers these days not being able to replicate the recordings. That's the problem I think, records these days, especially 'pop' records are heavily compressed and auto-tuned to within an inch of their lives so there's no way they can manage it. Back in the day when a singer was recording a song and they couldn't hit the note, they would re-record that line til they got it right. Of course, there was no auto-tuning software those days but maybe things should go back to that. It's just laziness now.
