I don't think he was joking. If you watch the scene, there are loads of little bits of 'debris' (probably cardboard or something!) flying around. One could have easily got in his mouth with all that yelling he's doing!

What I don't understand is why they included that take in the final edit. It's not like the spitting moment is in one long shot, it's actually a shot in itself so surely could have been removed? And it's not as if they only did one take of this scene - why knowingly include a shot of a man flobbing?! The bit where David Tennant spat in the scene where he said it's not fair is likely to be different because that was probably his best take so they used it, spit and all.

As you can see, I am very confused by this and have thought about it a great deal!

It was probably left in for realism - sometimes too much editing makes the acting rather artificial.
