Bacon,tomato,sweetcorn and broad bean soup

I made this soup today. It was delicious.

Vegans and veggies remove the bacon as the rest is all vegetable and very tasty. Next time round I will omit the bacon as it did make it quite salty.

Two to four slices of bacon chopped
1 shake of mixed herbs
1 tin sainsburys cherry tomatoes
1 tin sweetcorn
1 tin broad beans
1 Kallo vegetable stock cube

Fry bacon in a wok with the herbs.
When it has cooked at tomatoes,sweetcorn and broadbeans. Stir about.
Add vegetable stock.
Simmer until everything is cooked.

Liquidising is optional.

I suppose you could use this as a sauce for rice or pasta or even a casserole sauce for sausages. I have a lot left and I think I will make pasta for supper tonight.

thanks for the recipe, sounds delish! i've never had broad beans but i do have some butter beans i could use i suppose!

That stock cube is packed with salt aswell! A basic home made chicken stock would do the job much better. That way you can enjoy the bacon too

yes thats the only thing, kallo do pack the salt in the stock cubes though they do market a low salt version as do marigold stock which is ok too
i dont have time to make home made stock!

That stock cube is packed with salt aswell! A basic home made chicken stock would do the job much better. That way you can enjoy the bacon too
When you live on your own it would take days to eat a whole chicken.

marigold stock is delish (and can be vegan) - it makes a really good hot drink and is only 12 calories!!

Soup sounds great

thanks again for the recipe, agree with stud u like re stock, i dont have time to stand over boiling chicken carcasses either!

you can easily find a low salt stock these days

But why all the tins? I like to use fresh when I cook and think it is sad when recipes give you a tin of this and a tin of that. In my book it isn't cooking but assembling

I buy tins as it is cheaper. Broad beans are also hard to find in the supermarket unless they are tinned.

Fresh comes from Kenya or Peru in the supermarkets. I don't buy products more travelled than I am.

There were loads of fresh ones a month or two ago during the season, found them in loads of supermarkets. I wait for them to be reduced, buy a load and freeze them, they freeze pretty well and taste nicer than tinned.

If you can get Waitrose/Ocado, they do 750g bags of frozen baby broad beans which are really nice and only £1.38. Last ages and UK sourced too.

Sorry got a bit addicted to broad beans this year (I grew some too). Might have to try your recipe, sounds lovely.

I only had broadbeans for the first time the other week when I made Hannibal Lecter's meal of Lamb Chops, Fava Beans and Baked Potato

I got them frozen from Asda for £1. Tesco are the same price.


Btw, the soup sound good. I might try it as I have frozen broadbeans and frozzen sweetcorn. I also have some serrano ham so may posh it up a bit
