Is corned beef made from offal?

Why is it that wierd pinky colour?

Is it raw beef?

It just doesnt look like beef to me.

I presume you mean tinned? There are many recipies and sites available with info about the tinned stuff.

AFAIK original Corned Beef is poached Beef Brisket although it doesn't bare much resembleance to the tinned vareity.

In the UK finely ground corned beef in a small amount of gelatin (also known as bully beef; from the French bouilli ‘boiled’) is sold in distinctive oblong-shaped tin cans. It is mainly imported from Argentina, Brazil and Uruguay.

Have you ever noticed how crumbly the texture is - personally I havent eaten it in 15 years or so.

US corned beef is sliced brisket, a much higher quality food item.

Usually brisket, but sometimes bottom round, which is a leaner cut. In some countries other than the US or UK, the bottom round version is more common. I don't like the texture of overly fatty cuts of meat, so I much prefer it that way.

I tried to make my own corned beef by brining a brisket last year for St Patrick's Day. It took a couple days and it turned out to be a disaster! I wasted a nice cut of meat. A week later I found out from my butcher that they can do for me.

"Corned beef refers to a particular style of brine-cured beef. The "corn" in corned beef refers to the "corns" or grains of coarse salts used to cure it. The Oxford English Dictionary dates the usage of corn, meaning "small hard particle, a grain, as of sand or salt." Potassium nitrate (saltpeter) is often added to the brine to help preserve the beef's pink color."

One of Rick Stein's Food Heroes programs has a recipe for Irish Corned Beef using Brisket. It looked really good but again, nothing like the tinned vareity.

good stuff, even works with chinese food lol, parents used to sometimes cook with it, goes good with rice.

Proper Irish/ American corned beef is the same as salt beef, which I used to get at Tesco but they don't seem to do it anymore.
