Chicken question

I bought a pack of chicken thighs before xmas and stupidly did not seperate them into portions before freezing.

Obviously I'll have to cook them all in one hit but I was wondering if it'd be OK to take the meat off the bones, keep it refrigerated and then use it in something like a chicken stif fry - basically heating it up again?

Yes, if you keep the leftover cooked chicken in the coldest part of your fridge and use it within a couple days. You don't necessarily have to take it off the bone first, but makes it convenient when you go to use it for a stir fry. You could also just heat up the chicken on the bone. In my house it would be picked on slowly and wouldn't last a couple days!

You'd be fine to refreeze after cooking as well.

Could you not take out the amount you need then reseal the rest in a freezer bag?

I assume they cant separate them because they are frozen together.

Couldn't you just defrost them slightly in the microwave - sufficiently to pull them apart?

Make this. It's seriously delicious. Just let the thighs defrost then de-bone them.

Oh, and it's low in fat too.

Chicken and leek hot pot

1 tbsp olive oil
1 large garlic clove, peeled and crushed
700g trimmed leeks, thickly sliced
200g reduced fat soft cheese with garlic and herbs
125ml white wine
175ml chicken stock
10ml (2 tsp) cornflour
8 skinless, boneless chicken thighs
salt and pepper
300g potatoes, unpeeled and thinly sliced



Heat the oil in a flameproof casserole. Add the garlic and leeks and cook for about 5 minutes or until beginning to soften.

Meanwhile place the cheese, wine, stock and cornflour in a food processor and blend for about 30 seconds until smooth.

Arrange the chicken thighs on top of the leeks, pour the cheese mixture over and season to taste. Layer the potatoes on top of the chicken. Place a lightly oiled sheet of greaseproof paper on top of the potatoes, then cover with a lid or foil.

Cook at 180C, gas mark 4 for 1 and a half hours or until the potatoes are quite tender. Brown the potatoes under a hot grill before serving.

I can usually separate frozen chicken thighs by dropping them onto a (clean!) floor - just repeat until the required number have broken off. Works best with flat-packed thighs, but I have managed to break off individual thighs from a solid lump before!

I do this too. I put them into a carrier bag and tie it up though, I don't just drop them on the floor.

Usually works after a couple of drops.

Failing that, belt them with a rolling pin.

This is one of the reasons I love my fan oven. I can put it on cold setting (just the fan) & defrost chicken etc in about an hour.

Oh that sounds yummy - I've got to do a big cook next weekend to re-fill my defrosted freezer, I may give it a whirl.

It's even got a little defrost sign when it's on fan only. Defrosts a whole 2KG chicken in about 2 hours.

i dont think this is stupid (thawing slightly, and refreezing)

the reason for not leaving stuff out, and then freezing is that bacteria multiply

however, i cant believe that thawing stuff enough to separate it, and then refreezing it will allow bacteria to multiply.

slightly defrosting won't hurt.

It's defrosting and leaving it out for hours and then refreezing that's stupid.

We've accidentally left the freezer door open and slightly defrosted stuff including chicken and never got ill over anything after freezing it up again
