Vegie meals on a budget
Was trawling the net today to find a recipe to use up some eggs that are going out of date tomorrow, and found the following on a german website. Sounds a bit weird but was delicious :
500 g Carrots cut into thick slices 500 g Waxy potatoes, diced 1/2 Liter Vegetable stock 1/2 Onion, chopped 50 g Butter 2 tbs Curry powder 40 g Flour 250 ml Milk 4 Eggs, hard boiled Add vegetables to the stock and bring to the boil, simmer for 10 minutes. Strain veg, keeping the stock. Bring stock, milk, flour, currypowder and butter to the boil whilst whisking. Simmer for 5 minutes. Season to taste Add in vegetables, heat through and serve garnished with egg halves/quarters. The above is the basic recipe, and I also added the following which you may want to add all/some or none of ( depending on your taste), just after the sauce comes to the boil : 1 tbs mango chutney 1 tbs lemon juice Pinch of sugar Pinch of dried chilli flakes 2 tbs creamed coconut Chopped coriander. My husband gave it 10/10, and I worked out that a dinner that would have served 3 good eaters or 4 not so hungry people came in at less than £3. Anyone else got any budget vegie recipes ? |

I don't usually eat veggie meals or eggs (in fried, poached, boiled or scrambled form) but I do like Egg Fried Rice.
Not much point in giving a recipe as it's raid the fridge and/or freezer for veg to chuck in to it. |

I love cous cous, you can do it with any veg you like and it's cheap and lovely. I like to just roast loads of veggies and mix it with cous cous - it's nice with a baked spud or with some cheese and bread.
Here is a nice spaghetti recipe.. Ingredients 300g/10oz spaghetti 500g/1lb 2oz courgettes 3 tbsp olive oil 2 garlic cloves, sliced thinly 1 lemon, juice and zest grated finely 6 ripe tomatoes, chopped roughly 140g/5oz brie salt and freshly ground black pepper Method 1. Cook the spaghetti in boiling salted water for 10-12 minutes until tender or according to packet instructions. 2. Meanwhile, cut the courgettes in half lengthways, then cut into slices. Heat the oil in a large frying pan, then fry the courgettes and garlic for 3-4 minutes until softened. 3. Add the lemon zest, tomatoes and about 3 tbsp of the pasta water (enough to make the sauce). Cook for 2-3 minutes more until the tomatoes begin to soften. 4. Remove from the heat and stir in the brie so it just starts to melt, then season to taste with salt, pepper and lemon juice. 5. Drain the spaghetti well and add to the tomato sauce mixture. Toss well together, divide between bowls and serve. |
