Homemade cookies and buns

Hi all,
I really enjoy baking and buns and cookies are one of my favorite things to make. but im running out of new recipes to try on my colleagues, although they dont seem to complain!!

I tried a chocolate and orange cookie recipe i found through google the other day but the came out with a strange spongy texture!

Does anyone have any tried and tested recipes they'd like to share with me??

Hi..These links i found from google..I have tried some, and just copied the recipe out and kept..I done similar cake threads if you can find them..lol..this is my favourite thread too..yum yum

I made chocolate and coconut cookies last night they are alright but they need a marsmallow icing and I couldn't do it as no marshmallows.

Also I do marbled cupcakes as the texture always comes out yummy, maybe its the extra stirring?

Otherwise I suggest old favourites, iced fruits, silver balls, butterfly cakes... always go down well.

I had this gorgeous brownie mixture in NZ I made the famiyl I stayed with I wish I wrote the recipe down as not one I have tried since is as good

Sorry OP i dont have any ideas for cookies, i just wanted to say littlemunchkin that malteaser cake looks delicious - ill definately have to give that a go and also the cookie jar present idea is great too!

Hi..I have a cookie and cake book with recipes...When im up to it i will post some recipes from it..Not well this week..(got that stomach bug....),,feel abit better today..I will post some cookie recipes from it.

Orange Spice Cookies...Hope this recipe helps..

2 baking trays
4oz butter
7oz castor sugar
1 large egg
grated grind of 1 orange
8oz self raising flour
2 teaspoons ground mixed spices

Put butter and sugar into a bowl, and beat together with a wooden spoon until light and creamy.....Add the egg and orange grind to the bowl, mixing them together.....Sift flour and mixed spice into the bowl mixture....Put the dough onto a floured surface and mould into two sausage shapes with your hands(about 5cm) in diameter.....Cut off 10..12 thin slices...Place them well apart from each other on a greased baking tray, and bake in oven for 7..9 minutes....Remove the cookies from the oven, leave them on the trays for a minute or two, then lift them onto a wire rack to cool..

These ones are nice.. Chocolate Chip Buns

4oz soft margarine
4oz castor sugar
4oz self raising flour
2 tablespoons cocoa
1 egg
1 teaspoon vanilla essence
2oz choc chips
2 tablespoons milk

Put maragrine and sugar in bowl...Use a mixer and mix till light and fluffy...add the egg..Sift in flour and cocoa, then fold in the mixture using a wooden spoon..Then mix with mixer again, until mixture is stiff, drop in some milk a little at a time, and add the vanilla essence...Then add chocolate chips and mix with spoon...Put into cake cases and sprinkle some choc chips on the top..Bake in oven for about 20 minutes (180 degrees)..( i stick a knife in tops to see if cakes are done, if no mixture on knife cakes done)..My favourite recipe this..I will do some more soon..

Don't make cookies but I do bake cakes. Do you like Soreen malt loaf ? This is a lighter version of it and very quick and delicious !

6 ozs SR flour
2 heaped tablespoons Ovaltine
1 oz caster sugar
3 ozs mixed dried fruit
2 tablespoons golden syrup
200 ml milk

Just mix all the ingredients together in a large bowl, to a thick batter, then pour it into a greased 1lb loaf tin. Bake about 1 hour in a pre-heated oven 325/160 Gas 3. Leave to cool then turn out. Slice and spread with butter - yum!

Oat and Raisin Biscuits recipe
50g low fat spread
125g caster sugar (or low calorie sweetener like Canderel)
1 large egg, beaten
50g plain flour
1/2 tsp salt
1/2 tsp baking powder
175g porridge oats (large unrolled oats)
125g raisins (if you don‘t like raisins you could use chopped dates or apricots)
2 tbsp sesame or pumpkin seeds

Instructions:
Pre-heat the oven to 180°C.
In a large bowl, beat together the low fat spread and sugar until light and fluffy. Add the beaten egg and mix well together. Next, sieve the flour, salt and baking powder into the bowl and mix all the ingredients together thoroughly.

Next add the oats, raisins and seeds and mix well. The mixture should be quite thick by this point.

Grease two baking trays and place a tablespoon of the mixture in lines on this. Leave around 4 cms between each piece of the mixture.

Bake the biscuits in the pre-heated oven for around 15 to 20 minutes, or until they have taken on a nice golden brown colour all over.

Made these the other day, I substituted glace cherries for raisins and flaked almonds for sesame seeds - they're so delicious I've just bought stuff to make more. I got the recipe from a healthy eating site, so they're good for you too!

Ingredients

115g/4¼ oz butter
100g/3½ oz brown sugar
3 bananas, mashed
115ml/4¼ fl oz milk
1 tsp vanilla extract
2 free-range eggs
175g/6¼ oz wholemeal flour
100g/3½ oz wheat bran
1 tsp baking powder
1 tsp baking soda
¼ tsp salt
Handful chopped walnuts, to taste

Method

1. Preheat the oven to 190C/375F/Gas 5 and grease a muffin tin or line with muffin cases.
2. In a large mixing bowl, cream the butter and brown sugar until fluffy. Add the bananas, milk, vanilla and eggs and mix well.
3. Combine the flour, bran, baking powder, baking soda and salt and blend into the banana mixture. Stir in as many walnuts as you desire and pour the mixture into the muffin tray or cases.
4. Bake for 20-25 minutes or until a toothpick inserted into the centre of the muffin comes out clean. Cool in the tray for five minutes then place on a wire rack to cool completely.

Suggestion: Substitute Oat Bran for Wheatbran and indulge by throwing in a few jumbo raisins.

wHEN IT says wheat bran can you use bran flakes? What is wheat bran, I know that is a stupid question I just acutally don't know

If you are suggesting something made by the likes of Kellog's then no I can't see that working. What you need is this. You can usually get wheat bran in most supermarkets, oat bran is less available and a bit more expensive but not prohibitive.

When cereal grains are harvested each grain has a hard outer layer. This layer is sometimes removed when the cereal grain is processed and creates bran, which becomes a by-product of grain processing. The processed grain is not as nutritionally sound as is the grain that still contains bran. Oat bran has been established as having the ability to lower cholesterol.

o yeah I was talking about the cereal. Rubbish I don't think I would use wheat bran for anything else hmmmm. Would be good for lent though when I give up chocolate and have to resort to cake

Thing is though, for 500g at just over £1 for the oat bran or about 69p for wheatbran, you use a fifth of a packet each time and believe me I make them every week, my daughter loves them and you can't really fault them nutritionally.

Hi..

Is it OK to freeze home made choclate buns(home made)..I have just rustled some up in oven now...I just watched a choccie fix, but i havent been well all week, so wondering if i can freeze a couple..lol..I will eat one when its cooled later, but if i get stomach ache i will know its that..

I would say yes, absolutely, though they may feel a little wetter once defrosted, but am sure it won't do you any harm, remember Sara Lee gateux e.t.c, they were always frozen, the agony of waiting for it to defrost!

oh dear, is that what choc does to you, I usually get a headache or spots if I have too much- can usually find something else to blame it on though!
