You've tried sweet, sour, bitter and salty... now tubes of the 'fifth taste' to be sold in supermarkets

I heard on the radio today it has anchovy and mushroom's in it are they MSG?

Many foods naturally contain glutamate - of which MSG is the sodium salt, these include mushrooms, tomatoes, mature cheese & cured meats.

They're planning to sell this in Waitrose next week, at £2.99 a tube. So does anyone know for sure if this exotic sounding, "5th taste" is simply the flavour enhancer, MSG in a tube? If so, will have to use my own ingredients and give this a wide berth, as the stuff gives me horrendous headaches.

Umami is a sort of salty savoury-ness and I thought that Worcester sauce already had it in spades, but I may be wrong.

it is the meaty taste you get from mushrooms apparently

Just heard about it on You and Yours (Radio 4). It apparently allows you to detect proteins and can therefore be considered to be an enhanced savoury taste. Presumably the Waitrose tube will just add to the savouriness of whatever you are cooking.

The expert suggested that parmesan, anchovies, Marmite etc could do just as well.

kinda meaty/salty then, something to add a bit of richness to a gravy or shepherds pie e.t.c, I've made a few veggie lentil recipes that use a dollop of marmite, is this Umami stuff vegetarian?

As far as I can see, umami is a glutamate - but that does not make it the same as monosodium glutamate. So not associated with cheap takeaways.

Yeah i've just been reading that article today. Its just glutamate, found in lots of food naturally. No need to buy a paste for it.

I've tried it! (the specific product Umami the 5th Taste).

It was beautifully packaged for the price, (smart white box, white tube). I found the taste a bit more sundried tomato paste-y and black olive-y than I was expecting, though it definitely does enrich sauces with a complex lingering flavour.

Looking at the list of umami-rich foods I've come to the conclusion I must have an abnormally high amount of umami-sensitive tastebuds. They are all of my favourite foods

Pass me the Marmite please, I'm salivating at the thought!

umami is not new - isolated and identified in 1907 by Japanese professor who termed this flavor umami. He then patented a method of mass-producing a crystalline salt of glutamic acid, monosodium glutamate. MSG.

Why dont you just use ingredients that its natural in instead?

If you really enjoy your food, dont go for the substitute crap. Thats like living off vitamin pills.

How do you know this is crap though? Obviously I'm going to look at the ingredients to check if it's full of crap or not, but from reading the article it sounds interesting. Sure I could use parmesan, marmite or whatever and probably will but I'm going to try this too.
