Eggs
Do you keep them in or outta the fridge..I always keep them in the fridge, but they are always on the shelves..?
Wheres best for them..? |

I read your meant to keep them out of the fridge, but my wife keeps them in. The reason being that they will take on the smell of the fridge, so if you have any stronger smelling food in your fridge, your eggs will absorb it.
No health diffs though. |

I keep them in the fridge purely because I don't have a lot of space to keep them anywhere else and I know i'd end up knocking them off the worktop if I tried keeping them there

I keep them in the fridge ... I'd never really thought about how they were kept on the shelves in supermarkets. Odd.
I heard something about them taking on the smell too. |

I never keep mine in the fridge. Room temp eggs cook much better. Plus they take up too much room in the fridge.

Eggshells are porous and can absorb smells. If they were airtight they would last much longer than they do...
I can't think of one supermarket that refrigerates their eggs... (or should that be they're eggs ![]() I keep mine out of the fridge for most of the year - if it's a hot spell, I'll put them on the top shelf of the fridge. I bake a lot, so don't like having to wait for my eggs to come up to room temperature. |

If you think about it the shops/supermarkets never keep them in the fridge either.

I've always kept mine in the fridge because my fridge has special trays to hold them.
![]() My sister keeps hers out though - says they keep better that way.

It depends how quickly you use them. If used within a week or so then you can leave them at room temperature. Any longer and they are better in the fridge. The reason that shops do not refrigerate them is as follows - Quote:
Before purchase by the consumer, EC legislation requires that eggs are stored and transported at a preferably constant temperature. This is current practice within the UK egg industry and the reason why the majority of retail outlets' egg displays are not refrigerated. Changes in storage temperature and humidity can lead to condensation forming on the egg shell which can cause mould growth together with the possibility that any bacteria may infect the eggs as a result. After purchase, the consumer is advised to refrigerate the eggs to maintain freshness and reduce the possibility of bacteria growth resulting from exposure to the temperature and humidity variations of the domestic kitchen.
For preference they should be refrigerated in the egg box they came in as that absorbs moisture and helps stop taint. If soft boiling an egg straight from the fridge allow an extra minute to cook.

I take mine out but keep them fresh in the fridge as I am not going to use six eggs a week. I am lucky to eat six eggs a month. Not something I buy with regularity.
Plenty of recipes call for room temperature eggs, so I usually leave them out if I am making an omelette which is once in a blue moon. |
