Vegetarian Dinner
Hi
Looking for new ideas for vegetarian meals for 1. Tend to make the same things over and over again mainly sweet potato, chickpea and spinach curry and roasted buttersquash risotto (amongst other things). Anyone got any suggestions? |

I'll eat anything apart from meat and fish!
Although not so keen on mushrooms, celery and aubergines. |

oh i was going to suggest a mousaka until i read you didn't like aubergines.

Root vegetable and veggie sausage stew
Bean burritos or fajitas Lentil Dal Jacket Potatoes with whatever filling you like Pitta Pizza Pasta with roasted vegetables Ratatouille Peanut Soup Beans and rice They're all the quick meals I do quite regularly

How about Nutburgers ?
6 slices of brown bread 1 onion finely chopped 1 oz grated cheese 1 oz melted butter 1 egg 4 ozs chopped mixed nuts of your choice salt and pepper Tear bread into pieces, and place in a large food processor with everything else. Blitz for a few seconds, just to combine. Taste for seasoning. Shape into patties and fry in a little oil, 3-4 mins. each side. Nice hot or cold. |

A lovely dish I have often is chickpeas in a tomato based sauce (I use salsa or make my own) with melted cheese on top. It's lovely.
I also like to mix a little bit of pepper sauce in with pasta. It sounds odd but it's really nice with peas, peppers etc. |

Although im not a veggie, I often make all vegetable meals due to it being cheaper. Some of my favorite are;
Bean & veg chilli with sour cream & tortilla chips Bean & pepper fajitas, tacos, enchiladas etc Veg curry Broccoli & potatoe cheese Vegetable stir fry (baby sweetcorn, fine beans, bean shoots, peppers etc) |

One of my fav veg recipies is Curried Nut Roast with a home-made fresh tomato sauce, served with roast potatoes and Veg, very filling and feels like a full roast dinner.
