I made some muffins today using splenda instead of sugar and it only had a tablespoon of fat in too. Here's the recipe from the back of the splenda box:
210g plain flour 9 tbsp splenda 2 tsp baking powder 1 tsp bicarbonate of soda 1/2 tsp ground cinnamon 25g chopped walnuts 100g dried cranberries 150ml unsweetened orange juice 5 tbsp 0.2% fat fromage frais 1 tbsp & 1 tsp low fat marg, melted 1 egg 1. Preheat oven too 200C 2. Combine dry ingredients in a large bowl 3. Combine wet ingredients in another bowl 4. Add wet mixture to dry mixture and gently stir to combine 5. Divide the mixture between 9 muffin cases 6. Bake for 15-20 mins until a skewer comes out clean I didn't add the cinnamon (don't like it) and substituted the cranberries with raisins. Overall, they're quite nice. Texture-wise, they're not normal muffin texture, maybe a bit more springy than usual and they're not as sweet. But as a low sugar/low fat treat, they're good enough for me! |

Not too many calories, unless you eat the lot in one go! I have just about resisted troughing the lot!
![]() I thought about making some choccy ones next time using a sachet of highlights drinking choc, although I may as well use proper cocoa I suppose. Would leave raisins out and add extra nuts. |
