What does Butternut Squash taste like?

I was scared someone would ask that... I've been sussed. The thing is, I've never actually made it myself, it's my work canteen that sell it and it is really delicious.

I wouldn't imagine it's that difficult, I'm thinking along the lines of sweating some onion, add some thyme to flavour it, add small chunks of chopped swede, soften for 5 mins then add some stock (chicken or veg). Once the swede is softened (say about 20 mins) then blend. I'm not sure it would need anything starchy to thicken it, I think the swede would be enough. And it might be nice with some cream through it. I'll really need to talk nicely to the chef to see if he'll share the recipe with me...

I keep meaning to try it, but just haven't got round to it yet. If you're feeling daring and give it a try, please let me know how you get on.

I use a huge amount of butternut squash. I watch my weight since losing 45lbs and it's classed as a 0 point veg with WW. Yay!

I either cut it into wedges, spray it with low fat cooking spray and sprinkle with rosemary then roast it, or I replace chips with it, and I also mash it with plenty of black pepper and have it with Quorn sausages instead of having mashed potatoes.

I also make soup with it. Sweat off 1 chopped onion, a crushed garlic clove, a bird eye chilli or two, diced squash and a diced sweet potato until softened. Add hot vegetable stock and simmer until the veg is tender. Blitz and season to taste.

Hi again, not following you I promise, how much sweet potato do you add to the soup recipe? and how may WW points is that? Thank You.

It depends on how much soup you want to make really, but I use equal amounts of squash to sweet potato. I tend to go with 100g = 1 point, so if you used 500g the whole batch of soup would be 5 points - if you get 5 portions out obviously each portion would be 1 as all of the other ingredients are 0 points value.

I sometimes add a small amount of skimmed milk if the consistency is a little thick - just remember to add this in to the points count. I don't think it would make it more than 1 and a half points per serving though.

I bumped into the chef this morning - he uses leeks instead of the onion and also adds some potatoes to thicken it (or you can use roux). He also said to add just a small amount of cream at the end.

Oh, and I don't use equal amounts of squash and potato, I would use about one-third potato to squash ratio (or one large butternut to 2 medium sweet potatoes).
