Freezing & flavour intensity
Can freezing something intensify its flavour? I made a huge beef curry in the slow cooker week before last, and portioned it up into a few pour and store bags to freeze.
The first curry that we had was spot on, with just the right amount of spice to it. I took a bag out of the freezer last week, defrosted it thoroughly, then warmed it thoroughly - it was so spicy it was incredible. Is it the freezing that has done it? |

I dont think its the freezing process as such, but the time of freeze and defrost. If i keep something in the fridge and have it for lunch through the week, flavours are always much deeper 2nd time round. Happens with all sorts of casserole type meals.
