Oven temp not high enough?
Not pre-heating the Yorkshire tray?
I always fridge my batter until it's really cold before cooking.

It's so annoying when things like that happen!

I had always made cracking yorkshires but after we moved they were disastrous. My problem was the oven seal had broken. If you've not changed anything else is it possible?

Only thing that I can think of is that your fat isn't hot enough before you are putting the batter in. Either that, or the flour is out of date?

Flours ok, could be the oven door isnt shutting properly (just noticed!), given it a bit of a shove (got the beef in at the moment!)
