Fudge Recipe

Hey there,

I've never made fudge before and want to attempt it. Just wondering if any of you know a good recipe that's tried and tested?

I've never actually made fudge before but saw a good recipe of Nigella Lawson's on You Tube yesterday for dark choc fudge with pistachios which didn't look too complicated. Not tried it out though!

Fudge making is easy with the simplest of ingredients. Sugar,milk and butter. You can use clotted cream instead of milk. Put ingredients in a pan on the lowest heat. Make sure sugar dissolves. Make sure mixture boils but does not burn. Test it to see if it is ready with a spoon and a bowl of water. Becareful as mixture is hot! A little drop in the water will form a soft ball when you play with it. This stage can take 20 minutes. When a soft ball forms as part of the test, remove saucepan from the hob and then stir with a wooden spoon. The mixture will get thicker and you can then put it onto a greased baking tray or tin to cool. Once it is cooled you can cut it into cubes.

Have you ever tried it with philadelphia cheese in? I thought it sounded really odd, but it's so nice.

There's a recipe here:

Philly Chocolate Fudge
1 3-ounce pkg. cream cheese
2 cups sifted confectioner's sugar
2 1-ounce squares unsweetened chocolate, melted
1/4 teaspoon vanilla
dash of salt
1/2 cup chopped pecans

Place cheese in a bowl and cream it until soft and smooth. Slowly blend the sugar into it. Add the meltjavascript:void(0)ed chocolate. Mix well. Add the vanilla, salt and chopped peacnd mix until well blended. Press into a well greased, shallow pan. Place into the refrigerator until firm and cut into squares.

For a slightly softer fudge, blend in 1 teaspoon cream.

I've just copied that from a website - I don't have the cookbook where I get the recipe from because I'm at uni - so I don't know if it's the same, but maybe worth a go?

bought some fudge in Lakeland last week, cooo, it was lovely. Just kept stuffing it till it was gone and then I felt sick.

don`t think I`ll buy it again cors it`s normally £7.99, which is rather a lot. They`d reduced the box to £3.99,which is still a lot but I felt as though I deserved a bit of cheering up at the time s I bought the box.

Philly?! That does seem rather strange...not sure if I'm convinced! I presume it just makes it creamier?

The trouble with fudge is it is a question of maths, however long it takes to make it you eat it all in half that time and that is only with me troffing it down. It is the food of the Gods.
(Q) What is the best thing to put into fudge?
(A) YOUR TEETH.
(Q) Where should you store it?
(A) IN MY TUMM.

It's honestly not as strange as it sounds! I think you're right, it just makes it creamier and softer - it's lovely, nicest homemade fudge I've ever had!

I have a cadburys book at my parents with the best fudge in it I can't remember the recipe though sorry. I know it was chocolate, butter and I think Icing Sugar. I can't find the recipe on line osrry

When very much younger than today my brother and I tried to make toffee and by mistake we found out we had made fudge and that was my downfall in to the world of eating fudge mmmmmmmmmm got to go..........

Bump...

I made some choc fuge recently. It set, it looked good, it tasted quite nice but it wasn't what i would call fudge so hopefully i can find another recipe....
