What to do with a Partridge

I got 2 cheap in Tesco last night and i'm going to cook one for dinner later, but i've never had one before.

So i'll probably roast it but i'm not sure how long, and what will the flesh be like once it's cooked, does it stay red and how gamey is it.

And advice is welcome, thanks

I'd be tempted to joint it (like a chicken) shove in a pot with fried shallots, root veg and red wine and slow cook in oven
